This is about those family reunions where member swap war stories, recipes and advice for saving everything from their children to their marriages. No fun intended. No snickering or made to feel uncomfortable in anyway. Were all family, right?

Pasta. The best way to start a conversation

My grandma used to say swapping recipes is how you got your updates on family matters. This occasion was no different as we gathered in the kitchen to create the masterpiece Lasagna cups. It's Sunday and the sun is shining with the guys outback playing football. Lets start talking girls over putting the meal together. First we start the water to boil for the noodles. Then the meats created. The cheese grated and so on and so one. Advice as to how to gain more control of one wayward kid after another is thrown in there. Spicing marriage up. Sex secrets are exposed. No sex exposed. All laughing with no judgments passed. I give you this recipe today to try on your family. It may do the trick in mending broken fences.

Lasagna Cups

Yield: 12 cups

Prep Time: 1 hour

Cook Time: 1 hour

Total Time: 2 hours

for the sauce-
2 tablespoons olive oil
1/2 large onion
1/2 pound lean ground beef cooked and drained
1/2 red bell pepper, chopped
1 small zucchini, diced
2 cloves garlic, minced
1-6 oz. can tomato paste
1-8 oz. can tomato sauce {+1/2 can water to wash out can}
1-14.5 oz. can diced tomatoes
1 tablespoon dried basil
1/2 tablespoon dried oregano
1 bay leaf
1 teaspoon sugar
salt & pepper to taste

for the cheese filling-
1-10 oz. tub Philadelphia Italian Herb & Cheese Cooking Cream
1/3 cup grated parmesan cheese
3/4 pound mozzarella cheese, grated & divided
1/3 cup ricotta cheese
1/2 teaspoon pepper
1 egg

21 lasagne pasta sheets

For the sauce- heat olive oil in pot over medium heat and saute onions, pepper, zucchini and garlic until tender, 5 minutes. Stir in cooked ground beef and tomato paste until well incorporated. Spoon in and Stir remaining ingredients to bring to simmer. Reduce heat on stove to low and cook 30 minutes or so. {The longer it cooks, the better it will taste!} This will be very thick and worthwhile.

For the cheese filling- The recipe calls for ricotta but my family likes cottage cheese 4% curd. Either one will do. It's a lot like stuffed shells but not quite the hassle that is because the noodle is round and open at one end completely. Still give yourself enough time for prep and cooking. This promises to be a humdinger. To add variety get different color paper cups to put the noodles and meat in. It cooks right in regular muffins pans so you don't need to go out and buy anything special. Invite many over for this special recipe. Good for graduations this time of year! Something for his or her friends to remember her by since they'll be splitting up in the fall. Any other special occasion is good too.The colorful paper cups would be good for baby showers and girls's birthdays.
