When you are retired making those same dishes that you created for your family can still be done on a much smaller basis. Hope you enjoy some of the recipes that I will be including in this article.

Potato Salad for Two

My husband and I love to eat potato salad especially in the summer but making a large dish can be wasteful. That is why I learn how to make it in smaller amounts. The following recipe works very well and is most delicious.

Potato Salad for Two
Use potato buds make enough according to recipe for two.
Add mayo, mustard, dill pickle relish, onion, season with salt.

I like using the potato buds from the Schwans company placing about six in the microwave. When they are done cooking about 5 minutes then I add the mixture above and have delicious potato salad for two.

Chicken made simple

Making chicken is very easy now a days. When you buy your chicken make sure that you divide the portions according to the amount that you two would normally eat. You can thaw up your chicken portions in the amount that you two want to eat.

Now just use the mixture that you would normally use when you made chicken for the family only cut down on the portions.

My recipe:
Use one cup of flour
One Cup of corn meal
Wash the chicken in water
Place it into a mixture of milk and egg
Roll chicken in the flour and corn meal mixture
Put the chicken in hot oil fry turn as needed.

Beans, Pinto, Kidney, Great Northern

Beans make a delicious dish and you can do many things with them. First soak a cup of beans in water over night. Use the type of beans that you like.
Pinto Beans can become baked beans:
Put the beans in a baking dish, add brown sugar, maple syrup, bacon, and bake for about half hour in a 425* oven.

Pinto Beans can also be mashed and turned into refried beans. Add garlic and onion for flavor.

Kidney beans can be used in a salad. You can also use your beans as a delicious dish by adding bacon, garlic, and onion and cooking them until they are done.

When making Great Northern Beans, after soaking cook them with bacon and onion you can make a great soup that most people will enjoy eating.

Cooking for Two

When it comes to cooking for two you will find the best remedy is to make what you always cooked only cut down on the portions. The spices you used and the amount of ingredients so that it will only be enough for two.

Some favorite dishes are spaghetti, pizza, taco's, etc. These dishes are easy to find in the store on a smaller portion. This is what you should do in order to enjoy the those types of foods. Many people have to watch their salt intake so when you do buy those frozen entree's watch the salt.

Learning to cook in smaller amounts can become difficult if you are not sure how to cut back on your recipes.
